Do I have to have a journal or book already created to benefit from this training?
Nope. In fact, it will likely save you a lot of time if you watch this training before you have created your journal.

What programs do I need for this?
To watch the training you simply need a device you can play a YouTube video on.
To create your journal, I recommend using Canva. The free version will work just fine. Amazon KDP is also a free website. So, you can essentially create your journal and publish it to Amazon for free.
